Turkey the Old-Fashioned Way

There are many yummy ways to prepare and serve turkey. It might be deep-fried, brined, poached, grilled...to mention just a few methods of preparation. This article, however, will focus strictly on tips and techniques for preparing exquisite turkey the old-fashioned way - oven roasted.

8. Set the roasting pan on the bottom rack of the oven to keep the turkey away from the top, which is the hottest part of the oven.

9. Once the turkey is cooking in the oven, resist the temptation to 'peek' inside by opening the oven door. opening and end the oven door will cause the climatic characteristic to fluctuate, which will only increase the likelihood of a dry turkey. Avoid opening the oven door until practically 45 minutes before the turkey imaginable to be done.

10. How Much Turkey is Enough?

On average, to contribute 2 servings of turkey for each guest (and allowing for leftovers), the suggested weights are as follows:

> 10 pound turkey for 6 people

> 18 pound turkey for 12 people

> 21 pound turkey for 14 people

> 24 pound turkey for 16 people

- If you will be serving more than 16 guests (a recommended turkey size of more than 24 pounds), buy two turkeys that equal the total suggested weights.

- If the recommended turkey size is less than 12 pounds, you may wish to buy a turkey breast to roast.

How to Truss a Turkey...

To 'truss' means to fetch poultry or meat into a covenant shape. Trussing will ensure even roasting. The following technique is recommended when roasting poultry, especially a stuffed turkey.

1. To truss with string, take a piece of butcher's string about three times the distance of the turkey. Place the turkey on its back, tail end nearest to you. Slide the string underneath so that it is cradling the turkey in the town of its back.

2. Moderately pull the string up the sides...then nearby the wings. Pull the strings toward you, close to the breast, so that the wings are held against the body.

3. Cross the strings at the base of the breast, then wrap each string nearby the end of a drumstick.

4. Tie the ends of the string together, cinching it tightly so that the legs cross.

5. Finally, lift the turkey so that the tail end is up and wrap the string nearby the tail. Tie the string, pulling tightly so that the cavity is covered by the tail.

When is the Turkey Done?

You will want to test your instant-read or primary meat thermometer a few days before preparing the turkey to ensure it is properly calibrated. Place the thermometer in a pot of boiling water. It should register 212F (100C) -- water's boiling point at sea level. If the reading does not reach the desired temperature, you will want to buy a new thermometer.

Keep a particular eye on the thermometer while the last half hour of cooking since the internal climatic characteristic may rise rapidly toward the end.

Using a meat thermometer, test for doneness in the thickest, meatiest parts of the turkey:

Test the widest section of the breast near the wing joint; the climatic characteristic should be 165F (73C).

Test the legs at the top of the thigh, near the hip joint; the climatic characteristic should be 180 (82C).

If cooking a stuffed turkey, rule the internal climatic characteristic of the stuffing as well; it should be at least 165F (73C).

If using an instant-read thermometer, insert it deep adequate to reach the heat sensor (the indentation about two-inches from the tip).

Also discover the juices and oils at the bottom of the pan that are released while cooking. If they have a pinkish tinge, continue roasting; if they are clear, the turkey is probably done. (Try to insert the thermometer as infrequently as possible, to preclude the juices from escaping.)

Another way of checking for doneness is to move the leg up and down. The looser it becomes, the closer it is to being done.

How to Carve a Turkey...

To carve a turkey, it is important that you use a sharp carving knife and a good, heavy-weight fork. The following instructions will make carving a turkey practically effortless.

1. Begin by cutting straight through the skin where the leg meets the breast. Pull the leg away from the body with the fork and continue to cut down, close to the body, to find the joint where the thigh meets the body. Pull the leg out further and slice right straight through the joint to take off the leg and thigh.

2. Place the leg skin-side down and uncover the line at the joint where the thigh and the drumstick meet. Retention your knife along this line of the thigh, you can slice surely straight through the joint. If you hit resistance, adjust your angle and try again. Cut down straight through the line and cut off the thigh from the drumstick. Repeat this process with the other leg.

3. take off the wishbone (actually the collarbone) from the turkey. Removing the bone will preclude it from splintering when you carve the breast meat.

4. Next, run your knife straight through the skin along one side of the breastbone. Then cut down along the ribs, pulling the meat Moderately away from the bones in one large piece, leaving behind as puny meat as possible.

5. When you reach the wing joint, cut straight through it and continue to take off the breast from the body. Repeat with the other side.

6. Finally, take off the wings and slice the breast meat before serving. (For even, inviting slices, cut the meat against the grain.)

The smell of fish is something that lingers in the fishing boat, in the kitchen, the pots and pans, in your car, on your hands, in your clothes and everywhere else that is touched by the fish.

It is not a pleasant smell for most people. I know there are those that say they grew up reasoning that fish was supposed to smell like fish, but most find the lingering odor after the fish is long eaten to be unpleasant.

12.) This one might take a while but is recommended as having worked. If you have had an ice chest leak in the car try covering with newspaper. This can also be used for the freezer problem. It takes a while for the newspaper to digest the odor but it seems to do so.

13.) While cooking to cut the fish smell in the area try heating a limited bit of olive oil in a pan and adding cinnamon to it. The fish smell will give way to the sweet cinnamon smell.

14.) If you want to get rid of the fish smell before you cook it, soak the raw fish in a limited bit of vinegar and a lot of water. Is should not influence the flavor in any way.

15.) For the microwave try soaking a wet dish towel with a squirt of dish detergent on it and then place it in the center of the microwave and run the microwave on high for a few minutes. The scented stem will clean it. Then let air for a few minutes.

Prison Wives: The Forgotten Women In Our society

Having a husband in prison is a stigma in our society. any way it is inherent to cope and get through this difficult time in your life. Let me help you along the way and give you a few tips.

I myself am a "Prison Wife." My husband has been in the prison ideas for the past 22 months. He was first in a minimum protection unit, a place called "The Farm, " with open doors, and no barbed wire. Now, he is in a half-way house, hoping to come back home the summer of 2005.

The "Prison Wife" is the forgotten one, as she waits at home for her husband. Our community takes care of the sick, the dyimg, the homeless, but the prisoner's wife is alone and forgotten.

She is faced with insurmountable problems....financial,emotional, psychological, social, stigmatization, condition problems to face alone, children to take care of. She keeps the household "together," until her husband comes home. She works, pays the bills, pays the mortgage or rent, the car payments, insurances. She takes care of the children, repairs for the house, and just about all things else under the sun. Holidays and birthdays come and go. She is alone and lonely, most often faced with depression.
Most find it difficult to even face an additional one day. She lives in hiding because she is afraid the neighbors may find out. So she lies and says he is on a "business" trip, to protect herself...after all, the neighbors would be shocked to know a criminal's wife lives next door to them. And, what does she tell the children? No one wants to let their child play with a criminal's child.

When her husband leaves for prison, the wife goes through a duration of "grieving." She goes through the same "grieving process" that a widow goes through. The only contrast is that the widow can ultimately move on, while the prison wife cannot. The Prison Wife is a "wife," without a husband. She cannot go out and socialize, and it is difficult to make new friends, as she feels she is being "unfaithful" to her husband.

After a clear estimate of time (months or even years), it is appropriate in our socity for the widow to step out, and start dating and even re-marry. The Prison Wife who is faithful and dedicated to her husband does not have this option....some women wait years for their man to return...10 , even 20 or more years.

There are close to 2 million prisoners in our country....that makes me wonder just how many wives and loved ones are left behind and forgotten. We think about the prisoner, but never, ever, think about those left behind.....the wives, the children, the mothers, the girlfriends, to name a few. Those loved ones, who did not commit a crime, except the crime of "loving a criminal." They did not commit a crime, and yet they are punished.

When their husband goes to prison, they are not notified by the prison ideas where their husbamnd is. I believe there should be some announcement ideas in this country. The wife must sit and wait, until her husband is able to place a acquire call to her.

There should be maintain systems in this country for prison wives. There should be follow-up programs for families of the incarcerated, to see how they are coping.

I will now give you some tips on how to get through this duration of your life. It is from my own personal experience, and I hope it can help you...........after all, just remember, you are not alone..........there are so many of us out there experiencing the same feelings and emotions...the same problems.

"Ways To Cope"

1. Take one day at a time........Do not think too far in advance. Try to get "through one more day."

2. Plan small projects for each day, and try to reach a goal. For instance, I put all our photos in photo albums, while the first few weeks of my husband's incarceration. When that scheme was complete, I started cleaning out drawers and closets.

3. organize tour life............I re-organized bills and mail, using folders and envelopes, and I kept logs, writing all things down.

4. Keep pictures of your husband colse to the house....I had pictures in every room. I even had one posted on the refrigerator door.

5. Join a church group. I started baking cakes for the monthly cake sale. I enjoyed doing it, and felt I was contributing something to society.

6. Get involved...acquire hobbies. Knitting, needle-point, gardening, writing, holding a diary....anything. Just do something, even if you force yourself to do it. As time goes on, it will get easier, and you will begin to enjoy it. I planted an "Angel Garden," outside in the yard, with angel statues, and flowers. I also began writing poetry, stories and letters to the editor. I also began writing a journal, which became a very foremost part of my life.

7. Keep in close touch with your husband....Accept phone calls (if you can afford it, as prison phone calls are very expensive), send your husband letters, cards,magazine and newspaper clippings, and computer print-outs of thingd that interest him. Send him pictures (old and new)...Men in prison love to look at pictures from home. It helps them from becoming homesick. My husband has approximately 100 pictures that he keeps in photo albums, and loves to share with the inmates, and show them our family and home. If I convert something colse to in the household,or buy anything new, iI take a photograph and send it to him, so he always feels associated to our home. I also tkae pictures of the pets, the garden, and the cars.

8. Keep a notebook near the phone at all times. Jot down things you want to discuss with your husband when he calls. Remember, those are 15 tiny calls, and there is a lot to say in a short duration of time, so get organized beforehand.

9. Cry when you have to, but also try to stay focused. Do not be torn apart by the prison system. You are still a person, and a wife...and you need to be supportive to your husband.
